After exploring the tastes that made waves in Sibiu last year, we return in 2025 with a new edition full of flavor, dedicated to culinary trends.

We took a look at the updated menus of the city's restaurants, cafes and patisseries, followed the most creative and surprising dishes and gathered together the coolest appearances of the year.

🥭 Fruit-shaped cakes

The fruit-shaped desserts at Petit Patis in Sibiu follow a current trend in modern confectionery, inspired by the style of Cédric Grolet. Cakes in the shape of peaches, apricots, hazelnuts, cherries or vanilla pods are prepared by hand, with delicate mousses, creams and fruit purees inside. Among them is the “Rice Bean”, a reinterpretation in the same style of rice pudding, a classic dessert.

This type of cake is appreciated both for its taste, but especially for its realistic appearance. At Petit Patis, they appear in limited editions and change periodically, which is why you should get there as soon as possible and try them.

🧸 Coffee bears

At MooZ Brunch & Coffee in Sibiu, a new coffee concept has emerged, namely Teddy Coffee, which comes in two variations that are perfect for filming and photographing. The first option is a teddy bear made of iced coffee, placed in a glass over which hot milk is poured for the Teddy Latte or cold milk for the Teddy Iced Latte. The teddy bear gradually melts, releasing the coffee aroma and creating a completely new experience in serving coffee.

In the second variant, the container is the star, with the coffee being served in a bear-shaped glass. Both options quickly became a trend that is perfect for sharing on Instagram.

🛸 OZN-shaped burgers

Zyro Burgers brings something new to the burger universe, namely a round, pressed and closed format, similar to a UFO. The compact design makes the burger easier to handle, ideal for eating without the risk of getting dirty, including on the go or in the car.

The recipes are inspired by classic variants such as cheeseburgers, chicken burgers or vegan options, but the shape is what attracts attention and differentiates this concept from any other burger you have tried so far. The same principle has been applied to the dessert area, with “sweet burgers” filled with Nutella, Dubai chocolate or vanilla ice cream.

🥣 Açaí bowl

In recent years, the açaí bowl has become a worldwide favorite, earning its place on the menus of cafes and restaurants in major cities. Originally from Brazil, this colorful bowl combines exotic taste with a generous intake of nutrients, being appreciated by both those who want a healthy lifestyle and those who are passionate about unique and "instagrammable" dishes.

Açaí bowl can also be enjoyed in Sibiu, at the new Charlie's Speciality location on Turnului Street. Their recipe includes açaí powder, agave syrup, bananas, homemade granola, pollen, berries and coconut flakes, making it perfect for breakfast or a healthy snack.

🍵 Matcha in unique combinations

Matcha is no longer just an ingredient for traditional Japanese tea. In recent years, it has become a central element in modern drinks, and interest in it continues to grow. The classic matcha latte remains a favorite of many, but new combinations are emerging more and more often. The bright color and health benefits contribute to the popularity of this trend in urban cafes and bakeries.

At Mahalo Pastry in Sibiu, matcha has been creatively integrated into summer menus, along with unique flavors. Among the summer trends are matcha lemonade, but also matcha-based drinks with lavender, mango, vanilla, strawberries or coconut. At Warose Bakery, you will find matcha in combination with mango or orange. All these mixes propose fresh and surprising alternatives for those who want to discover matcha in a different form than the usual one.

🍦 Ice cream with unique flavors

Summer is the season when refreshing desserts become the stars of the menu, and ice cream remains a classic that never loses its charm. However, it is constantly reinventing itself, transforming into a true culinary trend in surprising combinations.

In Sibiu, ice cream lovers can enjoy unique experiences at Heiß-Eis Café, where in addition to the classic flavors there are also some more interesting ones, such as ice cream with papanași flavor, yogurt and muesli, lavender, pistachio cheesecake, popcorn with Nutella and many other surprising combinations. Culinarte also brings some special assortments, such as ice cream with macarons or that with mascarpone and Yuzu. And at Creme Gelato, you will also find ice cream with Jägermeister and orange, but also with spirulina, coconut and passion fruit.
